Simple Side Dish: How to Make Chewy Stir-Fried Dried Eggplant
Dried vegetables are practical because they are easy to store and can be used in various dishes. Today, we’re introducing a delicious stir-fried dried eggplant with a wonderfully chewy texture. It’s a fantastic side dish that tastes great even with minimal ingredients, perfect for serving with rice. Enjoy a delicious meal made easily!
Main Ingredients- Dried eggplant 50g
- Cooking oil 2 Tbsp
- Green onion (mostly white part) 10cm length
Stir-fry Seasoning- Soup soy sauce 1 Tbsp
- Anchovy extract 1 Tbsp (or fish sauce)
- Minced garlic 0.5 Tbsp
- Perilla oil 2 Tbsp
- Toasted sesame seeds 1 Tbsp
- Soup soy sauce 1 Tbsp

Cooking Instructions
Step 1
First, soak the dried eggplant in plenty of cold water for about 30 minutes to 1 hour before cooking until fully rehydrated. Once rehydrated, squeeze out excess water thoroughly.
Step 2
Prepare the green onion, focusing on the white part, and mince it finely. This way, the onion’s flavor is preserved while its texture becomes softer, blending well with the eggplant.
Step 3
In a large bowl, combine the squeezed rehydrated eggplant, minced green onion, 0.5 Tbsp minced garlic, 1 Tbsp soup soy sauce, and 1 Tbsp anchovy extract.
Step 4
Gently mix the ingredients with your hands, ensuring the seasoning is evenly distributed. Let it marinate for about 10 minutes to allow the flavors to meld.
Step 5
Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the marinated eggplant and begin to stir-fry. Stir occasionally to prevent the eggplant from sticking together.
Step 6
Once the eggplant becomes tender and starts to soften, add 2 Tbsp of perilla oil and continue to stir-fry. Cook for another 1-2 minutes, allowing the nutty aroma of the perilla oil to infuse into the eggplant.
Step 7
Finally, generously sprinkle 1 Tbsp of toasted sesame seeds and give it a final light stir to combine everything evenly. This adds an extra layer of nutty flavor, making it even more delicious.
