Ingredients

  • 2 cups all-purpose or bread flour (approx. 250g)
  • 1 teaspoon instant dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 180ml lukewarm water (around body temperature)
  • Plenty of pizza cheese (mozzarella, cheddar, or a mix)

First, in a small bowl, combine 180ml of lukewarm water with 1 teaspoon of instant dry yeast. Stir gently and let it sit for about 5 minutes until it becomes frothy. This shows the yeast is active! In a large mixing bowl, combine 2 cups of flour, 1 tablespoon of sugar, and 1 teaspoon of salt. Pour in the activated yeast mixture. Mix with a spatula or your hands until a rough dough forms. Transfer the dough to a lightly floured surface and knead by pushing and folding for about 5-10 minutes, until it becomes smooth and elastic. Place the kneaded dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place (like inside a turned-off oven with the light on) for about 1 hour, or until doubled in size. This is the first proof.

Once the dough has doubled, gently punch it down to release the air. Divide the dough into two equal portions. Take one portion and roll or press it out into a thin, rectangular shape on your work surface. Spread a generous amount of pizza cheese evenly over the dough, leaving a small border around the edges. Starting from one of the longer sides, carefully roll up the dough tightly, encasing the cheese inside.

Pinch the ends of the rolled dough securely to seal them. Then, gently shape the entire roll into a round loaf by cupping your hands around it. Ensure the seam is well-tucked underneath to prevent it from opening during baking.

Place the shaped dough onto a baking sheet lined with parchment paper. For an extra cheesy topping, you can sprinkle more pizza cheese over the top of the loaf. Bake in a preheated oven at 180°C (350°F) for approximately 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. Your delicious cheese bread is ready!
