Step 1

Hello everyone! Today, we’re going to make a beloved side dish: Dried Radish Salad, also known as Mu-mallaengi Muchim. It pairs exceptionally well with Bossam (Korean boiled pork wraps) and is a fantastic addition to your lunch box. Let’s follow Chef Baek Jong-won’s tips to make this dish even more delicious!

Step 2

First, prepare your dried radish. Rinse the dried radish thoroughly under running water. Then, soak it in plenty of water for at least 30 minutes until it becomes soft and pliable. After soaking, wash it again under running water and squeeze out as much moisture as possible. It’s crucial to wring out the radish very well; otherwise, the seasoning might become diluted and the flavor less intense.

Step 3

Place the well-squeezed dried radish into a large mixing bowl. Now it’s time to add the seasoning ingredients. Add 4 tablespoons of gochugaru, 5 tablespoons of corn syrup, 3 tablespoons of sugar, 1.5 tablespoons of salt, 1.5 tablespoons of minced garlic, and 2 tablespoons of fish sauce.

Step 4

Once all the seasoning ingredients are added, use a spatula or your hands to thoroughly mix the radish. Ensure that the seasoning coats every single piece of radish evenly. The secret to a great taste is to gently but thoroughly toss and mix, as if you’re coating each strand with chili flakes.

Step 5

Finally, sprinkle a generous amount of toasted sesame seeds for a nutty aroma and mix gently to finish. While salt alone can season it well, adding a bit of fish sauce enhances the savory depth and umami flavor, making it much more complex. Also, using corn syrup along with sugar not only adds a pleasant sweetness but also gives the radish a nice sheen and stickiness, helping the seasoning adhere better. You can adjust the amount of sugar and corn syrup to your personal preference. Now, your delicious Dried Radish Salad is ready to be enjoyed!
