  • 1 Red chili

Seasoning

  • 1 Tbsp Doenjang (Korean soybean paste)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Minced garlic
  • A little Sesame oil
  • A little Toasted sesame seeds

Begin by thoroughly washing the salicornia. Rinse it multiple times under running water, gently rubbing to remove any dirt or sand. Ensuring it’s clean is key for a delicious result.

Bring a pot of water to a rolling boil. Once boiling, carefully add the washed salicornia and blanch for just 3 minutes. Be mindful not to overcook it, as this will diminish its signature chewy texture.

Immediately after blanching, plunge the salicornia into a bowl of cold water. This rapid cooling helps to preserve its crispness and refreshing texture. Once cooled, gently squeeze out as much excess water as possible with your hands.
