Cooking Instructions

Step 1

First, we’re going to make a very simple yet delicious salad using river snails, onions, and chives. This recipe is characterized by bringing out the natural flavors of the ingredients without complex steps.

Step 1

Step 2

This can be made quickly and easily with common ingredients you likely have at home. Start by thinly slicing the onion. Wash the chives thoroughly and cut them into 4-5cm lengths. Also, have your cooked and shelled river snails ready. Place all the prepared ingredients into a bowl.

Step 2

Step 3

Now it’s time to make the delicious dressing! In a separate bowl, combine 1/2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp soy sauce, 1/2 Tbsp minced garlic, 1 Tbsp oligosaccharide, 1/2 Tbsp plum extract, and finally, a pinch of toasted sesame seeds for nutty flavor. If you find the taste a bit bland, you can add a tiny pinch of salt. If you’re in a hurry, you can also use store-bought spicy chili sauce (gochujang-based) for a quick and tasty result. Mix all the dressing ingredients well. Then, pour the dressing over the prepared vegetables and river snails and gently toss to combine everything.

Step 3

Step 4

And there you have it – a sweet, sour, and spicy river snail and chive salad! It’s great as a side dish for rice when you don’t have much appetite, and it also makes a wonderful accompaniment to drinks. The chewy texture of the river snails combined with the crispness of the vegetables creates a delightful eating experience.
