Cooking Instructions
Step 1
First, rinse the acorn jelly briefly under running water. Then, cut it into bite-sized pieces, about 1.5cm thick strips. Avoid cutting it too thinly, as it might break apart easily. For the carrot and cucumber, wash them thoroughly, remove the seeds from the cucumber, and julienne both into thin strips.
Step 2
Thinly slice the onion. If you find raw onion too strong, soak the slices in cold water for about 5 minutes, then drain them very well. Wash the lettuce and tear it into large, bite-sized pieces. Add the sliced onion, torn lettuce, julienned carrot, cucumber, and prepared acorn jelly into a mixing bowl.
Step 3
Now, let’s prepare the delicious dressing. In a small bowl, combine 6 Tbsp soy sauce, 2 Tbsp plum extract, 4 Tbsp red pepper flakes, 2 Tbsp sesame oil, 1 Tbsp sugar, 1 Tbsp sesame seeds, and 1.5 Tbsp minced garlic. Whisk everything together until well combined. Once the dressing is ready, pour it over the ingredients in the mixing bowl.
Step 4
Gently toss everything together with your hands to ensure the dressing coats all the ingredients evenly. Be careful not to mix too vigorously, as this could break the delicate acorn jelly. Once everything is nicely coated, transfer the salad to a serving dish. Enjoy your perfectly seasoned and incredibly tasty Acorn Jelly Salad! It’s a fantastic side dish for any meal and makes a wonderful accompaniment to Korean rice wine (Makgeolli).
