Step 1
Today, we’re making potato pancakes using red potatoes, known for their wonderfully chewy texture. Using red potatoes gives them a unique charm compared to regular potatoes.
Step 2
Wash the red potatoes thoroughly, peel them, and then grate them finely using a grater. Place the grated potatoes in a sieve and let them sit for about 10 minutes to separate the liquid. This process helps to concentrate the potato starch, enhancing the chewy texture.
Step 3
After 10 minutes, carefully pour off the clear liquid that has risen to the top of the grated potatoes. The starch will have settled at the bottom.
Step 4
Collect only the settled starch from the liquid and combine it with the grated potatoes. Add 2 pinches of salt for a very light seasoning. Be careful not to over-salt, as it can overpower the natural potato flavor.
Step 5
Heat a generous amount of cooking oil in a pan over medium-low heat. Spoon dollops of the potato mixture onto the pan, forming round pancakes. Cooking them slowly over medium-low heat will ensure they become crispy on the outside. (The TV show featured edible flowers, but they are optional and don’t affect the taste.)

Once one side is golden brown and cooked, carefully flip the pancake. Using red potatoes gives the pancake a color similar to a ‘susu jeon’ (millet pancake), which is quite interesting! You’ll notice a delicious, nutty aroma as they cook.
