Cooking Instructions
Step 1
Let’s start by making the delicious onion soy dipping sauce. Peel and rinse the 1/2 onion, then dice it into small, bite-sized pieces (about 0.5 cm). Place the diced onion in a small bowl.

Remove the stems from the 3 Korean green chili peppers, wash them, and decide whether to include or remove the seeds based on your desired spice level. Chop them roughly, similar in size to the diced onion, and add them to the bowl with the onion.

Now, it’s time to add the seasoning. Pour 3 tablespoons of soy sauce over the onions and chili peppers in the bowl.

Add 3 tablespoons of water and 1 tablespoon of corn syrup (or honey) for sweetness. Measure these out carefully.

Finally, add 1.5 tablespoons of vinegar for a tangy kick. Stir everything together gently with a spoon until well combined. This dipping sauce is best when allowed to meld its flavors, so place it in the refrigerator to chill while you prepare the pancakes.

Now for the star of the show: preparing the potatoes for the pancake! Wash and peel the 5 medium-sized potatoes. Cut the peeled potatoes into manageable pieces that will fit into your Hurom juicer.

Add the reserved white potato starch from the bottom back into the bowl with the extracted potato pulp. Use a spoon or spatula to gently mix the starch and potato pulp together until well combined and there are no lumps. This creates your chewy potato pancake batter.

Heat a frying pan over medium heat and add a generous amount of cooking oil, ensuring it coats the entire surface. Spoon portions of the potato batter into the hot pan. Use the back of your spoon or a spatula to spread each portion into a round, flat pancake, about 0.5 to 1 cm thick. Avoid overcrowding the pan; cook in batches if necessary.

Reduce the heat to medium-low and cook slowly. Once the underside of the pancake is golden brown and crispy, carefully flip it using a spatula. Cook the other side until it’s also a beautiful golden brown. Keep an eye on the heat to prevent burning.

Once both sides are perfectly golden brown and cooked through, carefully remove the potato pancakes from the pan and arrange them attractively on a serving plate. They are best enjoyed fresh and hot!
