I’ve recently fallen in love with thinly sliced pork belly! It’s so convenient to keep in the freezer and use in various dishes. Today, let’s create a fantastic meal by stir-frying this tender pork belly with chewy glass noodles and crisp bean sprouts. It’s simple yet incredibly satisfying.

  • 50g glass noodles
  • A handful of spinach
  • 1 red chili pepper

  • 1 Tbsp oyster sauce
  • 1 tsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking wine (mirin or sake)
  • 1 tsp ginger paste or syrup
  • Pinch of black pepper

Begin by preparing your ingredients: the thinly sliced pork belly and the bean sprouts. Using fresh ingredients will ensure the most delicious stir-fry.

Rinse the bean sprouts thoroughly under running water and drain well. Wash the spinach as well. It’s best to have them ready to go into the pan so they retain their crispness.

Soak the glass noodles in warm water beforehand to make them easier to handle and cook. Soaking them in warm water significantly speeds up the process. Once softened, drain the noodles.

In a wide pan, add the thinly sliced pork belly. Add the oyster sauce, minced garlic, and ginger paste to tenderize the meat and infuse it with flavor. Stir-fry over medium heat until the pork is well-coated and starts to cook.
