- 2 King Oyster Mushrooms (approx. 158g after trimming)
- 40g Carrot
- 18g Green Onion

Step 1
First, trim the ends of the king oyster mushrooms. Cut them in half lengthwise, then slice into pieces about 2-3mm thick. Thinly julienne the carrot.

Finely chop the green onion and have the 0.5 Tbsp of minced garlic ready. Prepping all your ingredients like this makes the cooking process much smoother.

Heat 3 tablespoons of cooking oil in a pan.

Add 3 tablespoons of water to the oil and place the pan over medium-low heat on the stove. When stir-frying mushrooms, it’s better to use a small amount of water rather than a lot of oil, as the mushrooms will release their own moisture. Cooking over medium or medium-low heat, rather than high heat, helps create wonderfully moist stir-fried mushrooms.

Once the pan is heated and you’ve added the ingredients, start stir-frying. When the mushrooms begin to soften slightly, add the julienned carrots. Stir-fry for another 1-2 minutes until the carrots are tender-crisp.

Now, add 0.6-0.7 tablespoons of oyster sauce to enhance the savory flavor. Drizzle it along the edges of the pan; this helps the oyster sauce caramelize slightly and release more aroma.

Add 0.2 teaspoons of salt for basic seasoning.
