Main Ingredients

  • 2 handfuls Oyster Mushrooms (approx. 150-200g)
  • 1/2 medium Zucchini
  • 1/2 medium Onion

Seasoning & Others

  • 1/2 to 1 Tbsp Shrimp Paste (adjust to taste)
  • 1 Tbsp Minced Garlic
  • A pinch of Toasted Sesame Seeds
  • 1-2 Tbsp Cooking Oil

Cooking Instructions

Step 1

First, prepare the vegetables. Wash the zucchini thoroughly and slice it into half-moon shapes, about 0.5 cm thick. Peel the onion and slice it into thin strips, also about 0.5 cm thick. Trim the tough ends off the oyster mushrooms and tear them into bite-sized pieces by hand. Tearing them into moderate sizes rather than too small will give a better texture.

Blanch the prepared oyster mushrooms in boiling water for about 30 seconds to 1 minute. This step removes any earthy smell from the mushrooms and makes their texture chewier. After blanching, rinse the mushrooms under cold water and squeeze out any excess moisture firmly with your hands. Ensuring they are well-drained prevents the stir-fry from becoming watery and helps the seasoning to be absorbed better.

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced zucchini and the squeezed oyster mushrooms. Now, add about 1/2 tablespoon of shrimp paste. Taste and add more if needed, adjusting to your preference. Shrimp paste adds a rich umami flavor and can season the dish sufficiently without additional salt. It’s important to taste and adjust the seasoning at this stage.

Stir-fry the zucchini and mushrooms over medium heat until they become tender. Keep stirring occasionally to prevent sticking. Once the zucchini starts to look slightly translucent and softens, proceed to the next step.

Add the thinly sliced onion and 1 tablespoon of minced garlic to the pan. Continue to stir-fry together for about 1-2 minutes until the onion becomes transparent and the garlic becomes fragrant. The onions will release their natural sweetness as they cook, balancing the overall flavor.

Finally, sprinkle a pinch of toasted sesame seeds for added nuttiness. Give everything a final quick stir-fry (‘whirly-whirly’!) to combine all the ingredients well. Your delicious oyster mushroom and zucchini stir-fry is now ready! It tastes best served immediately while hot.
