My camera has been acting up lately, and the image quality isn’t quite up to par! Still, today we’re making a super simple oyster mushroom salad that’s perfect as a quick side dish. Let’s get started on this delightfully chewy and flavorful mushroom dish!

Mushrooms

  • 2 packs of young oyster mushrooms (a variety of oyster mushroom)

Seasoning

  • 1 Tbsp soup soy sauce
  • 1 Tbsp regular soy sauce
  • 1/4 Tbsp red pepper flakes (gochugaru)
  • 1/2 Tbsp plum extract (maesilcheong)
  • 1 tsp sesame seeds
  • 1/4 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare 2 packs of young oyster mushrooms. First, trim off the tough bottom ends of the mushrooms. Then, gently tear them by hand into bite-sized pieces. Bring a pot of water to a boil with a pinch of salt, and blanch the mushrooms for about 30 seconds to 1 minute.

It’s crucial not to overcook the oyster mushrooms, as they can become mushy. Blanch them only until their color becomes vibrant. This step is key to maintaining their delightfully chewy texture.

Immediately after blanching, rinse the mushrooms under cold running water to quickly cool them down. Drain them thoroughly in a colander, ensuring all excess water is removed. Any remaining moisture can dilute the seasoning and make the salad taste bland.

Now, let’s make the delicious seasoning! In a bowl, combine 1 Tbsp of soup soy sauce, 1 Tbsp of regular soy sauce, 1/4 Tbsp of red pepper flakes, 1/2 Tbsp of plum extract, 1 tsp of sesame seeds, and 1/4 Tbsp of sesame oil. Mix them well. Feel free to add minced garlic or a touch of sugar if you prefer.

Add the drained oyster mushrooms to the bowl with the seasoning. Gently toss and mix the mushrooms with your hands until they are evenly coated with the dressing. Be careful not to mash the mushrooms; handle them gently.
