Main Ingredients

  • 1 pre-cooked octopus (cut into bite-sized pieces)
  • 1/2 onion (thinly sliced)
  • 1/2 stalk green onion (sliced diagonally)
  • 1/4 carrot (thinly julienned)
  • 1/4 head cabbage (thinly shredded)
  • 1 cheongyang pepper (finely chopped, adjust for spice preference)

Seasoning Sauce

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • Pinch of black pepper
  • 2 Tbsp mirin (cooking wine)
  • 1/2 cup water (approx. 100ml)

Cooking Instructions

Step 1

First, rinse the pre-cooked octopus and cut it into bite-sized pieces. Thinly slice the onion, carrot, and cabbage. Slice the green onion diagonally and finely chop the cheongyang pepper (remove seeds if you prefer less heat). Slicing the vegetables thinly will help them cook faster.

In a heated pan, add the bite-sized octopus, shredded cabbage, onion, carrot, and chopped cheongyang pepper. Add all the sauce ingredients: 1 Tbsp gochujang, 1 Tbsp soy sauce, 1/2 Tbsp sugar, 1/2 Tbsp minced garlic, a pinch of black pepper, 2 Tbsp mirin, and 1/2 cup of water. Mix everything together to ensure the sauce coats the ingredients well.

Turn the heat to medium and stir-fry until the ingredients and sauce are well combined. Cooking over medium heat rather than high heat prevents burning and allows the sauce to reduce nicely. The natural moisture from the vegetables will combine with the sauce to create a delicious glaze.

Once the ingredients are partially cooked and the sauce begins to thicken, add the sliced green onions and minced garlic (adjust garlic to your preference). Continue to stir-fry for another minute or two. The fresh flavor of the green onions and the aroma of garlic will enhance the dish.

Finally, stir-fry for about 1 more minute to evaporate excess moisture and coat everything in the thickened sauce. Serve this delicious octopus stir-fry generously over a bowl of warm rice. A sprinkle of sesame seeds or seaweed flakes can be a great finishing touch, if desired!
