Bibim Guksu Ingredients

  • 200g beef brisket
  • 2 servings of somyeon noodles (approx. 200g)
  • 1 cucumber
  • 1/2 onion
  • 1/2 carrot
  • 1 handful cabbage (approx. 50g)
  • 2 Tbsp soy sauce (for sauce)
  • 1 handful seaweed flakes (for garnish)
  • 2-3 drizzles of oligodang (or corn syrup)
  • 1 Tbsp gochujang (for sauce)
  • 1 Tbsp gochugaru (for sauce)
  • 1 Tbsp minced garlic (for beef marinade)
  • Pinch of black pepper (for beef marinade)

Spicy Kimchi Seasoning

  • 1 bowl of well-fermented kimchi (approx. 100g)
  • 1 Tbsp sugar
  • 1 Tbsp sesame oil
  • Pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

Prepare a variety of vegetables. Thinly julienne the cucumber, and slice the onion and carrot into similar thin strips. Shred the cabbage finely into bite-sized pieces. (You can add perilla leaves for extra aroma if you like.) Place all the prepared vegetables in a large bowl.

Make the kimchi seasoning. Finely chop the well-fermented kimchi. Add 1 Tbsp sugar, 1 Tbsp sesame oil, and a pinch of sesame seeds to the chopped kimchi, and mix well by hand until the seasoning is evenly distributed.

Add the seasoned kimchi to the vegetables prepared earlier and mix them together. Gently toss the vegetables and kimchi to combine.

Now, let’s make the bibim guksu sauce. Add 1 Tbsp gochujang and 2 Tbsp soy sauce, and mix again by hand until all ingredients are well combined. Taste and adjust with more soy sauce or gochujang if needed.

Cook the somyeon noodles. Add the somyeon to a large pot of boiling water and cook according to the package directions. Rinse the cooked noodles thoroughly under cold running water to remove excess starch, and drain completely. This step ensures the noodles are chewy.

While the noodles are cooking, let’s grill the beef brisket. Heat a pan and add 200g of beef brisket. Season it with 1 Tbsp minced garlic and a pinch of black pepper. Grill over medium heat until golden brown and slightly crispy on both sides, adding a rich, savory flavor.

Add the drained somyeon noodles to the bowl containing the vegetables and kimchi seasoning. Sprinkle in 1 Tbsp gochugaru and get ready to mix everything together. If you prefer it sweeter, add 2-3 drizzles of oligodang (or corn syrup).

Now, mix all the ingredients for a delicious bibim guksu! Mix with your left hand, then your right hand, to create the perfect bibim guksu!
