As the weather gets cooler, it’s easy to catch a cold! That’s when warm and delicious soup dishes really hit the spot. Today, I’m excited to share a recipe for ‘Chewy Noodle & Soft Tofu Stew’ that makes a beloved dish even more special. It’s a reinterpretation of ‘Jjulsun’, a nostalgic food from my university days, made with a clear broth version! Some of you might find it unfamiliar, but it’s a dish with an irresistible charm once you try it. Experience a delightful day with this clear chewy noodle and soft tofu stew, where the chewy texture of the noodles harmonizes beautifully with the silken softness of the tofu!

Main Ingredients

  • 1 pack clams (purged of sand)
  • 1 serving chewy noodles (jjolmyeon)
  • 1/2 block soft tofu (sundubu)
  • 1 egg

Cooking Instructions

1. Lightly oil a pot and add the large-cut green onions. Sauté over medium-low heat until fragrant, creating a delicious scallion oil. 2. Once the aroma of the green onions is released, add the sliced onion and sauté until translucent, bringing out its natural sweetness.

3. Add the ground meat and break it apart as you stir-fry it with the vegetables. The meat will add further depth of flavor as it cooks.

4. Pour 800ml of water into the pot with the sautéed ingredients. Add 1 coin broth cube to enhance the savory notes. (Alternatively, you can use homemade anchovy or kelp broth.)

5. Add the prepared zucchini and finely chopped Cheongyang chili pepper (if you prefer a spicy kick), along with 1/2 Tbsp minced garlic. 6. Stir in 1.5 Tbsp soy sauce for soup and bring to a rolling boil over high heat to allow the flavors to meld.

7. Once the broth is vigorously boiling, add the purged clams. 8. Season with salt and pepper to your liking. 9. Cover the pot and simmer over medium-low heat for about 20 minutes. This allows the refreshing taste of the clams and the savory essence of the vegetables to fully infuse the broth.

10. When the soft tofu stew is nearly ready, boil the chewy noodles in a separate pot according to the package instructions. Rinse the cooked noodles under cold water to prevent them from sticking.

11. Gently break apart the soft tofu with a spoon and add it to the simmering stew. 12. Whisk the egg and slowly drizzle it into the stew from the edges, allowing it to cook gently.

13. Add the cooked chewy noodles to the soft tofu stew. Simmer briefly, just until the noodles are heated through. Be careful not to overcook, as the noodles can become mushy. 14. Taste the stew and adjust seasoning with more salt or soy sauce if needed.
