  • Category : Side dish
  • Ingredient Category : Mushrooms
  • Occasion : Bar food
  • Cooking : Grilled / Roasted
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 2 King Oyster Mushrooms
  • 1/4 each of Red and Yellow Bell Pepper
  • 1 segment of Cucumber (approx. 7cm)
  • 4 Vienna Sausages
  • 8 Cherry Tomatoes

Sauce Ingredients

  • 1 Tbsp Oyster Sauce
  • 1/2 Tbsp Soy Sauce
  • 3 Tbsp Water
  • 1 Tbsp Corn Syrup (or Oligosaccharide)

Cooking Instructions

Step 1

Peel the cucumber using a peeler and cut it into strips about 0.5cm thick. Remove the seeds from the bell peppers and cut them into similar strips.

Step 1

Step 2

Slice the king oyster mushrooms into about 0.5cm thick rounds. Blanch them in boiling water for about 1 minute, then rinse under cold water and squeeze out excess moisture. This will enhance their chewy texture.

Step 2

Step 3

Arrange the prepared cucumber and bell pepper strips attractively on the blanched mushroom slices. Roll them up tightly, like making a small sushi roll.

Step 3

Step 4

Insert a toothpick through each rolled mushroom to secure it and prevent it from unrolling during cooking.

Step 4

Step 5

Blanch the Vienna sausages in boiling water for about 1 minute, then drain. Cut them in half lengthwise or into bite-sized pieces. Prepare the cherry tomatoes by removing their stems.

Step 5

Step 6

Thread the secured mushroom rolls, blanched Vienna sausages, and cherry tomatoes onto skewers, alternating the ingredients for a visually appealing presentation.

Step 6

Step 7

Heat a pan over medium-low heat. Place the assembled skewers in the pan. Add all the sauce ingredients (oyster sauce, soy sauce, water, corn syrup). Cook, stirring occasionally, until the sauce reduces and coats the skewers, about 5-7 minutes.

Step 7

Step 8

Once the sauce has thickened and glazed the skewers, carefully arrange them on a serving plate. The vibrant colors will make for an appetizing display.

Step 8

Step 9

These glazed mushroom skewers, with their savory and slightly sweet flavor, pair wonderfully with beer or wine, making them an ideal appetizer that your husband will surely love!

Step 9

Step 10

If you have children who are picky eaters when it comes to vegetables, these skewers can be a fun and tasty way to introduce them to new flavors. They’re also a great snack option for kids.
