Chewy King Oyster Mushroom Pizza with Shrimp and Bacon

I made this pizza using shredded king oyster mushrooms instead of a traditional dough! The satisfyingly chewy texture of the mushrooms is absolutely delicious!
Main Ingredients- King Oyster Mushrooms 200g
- Cornstarch 2 Tbsp
- Salt 1/2 tsp
Cooking Instructions
Step 1
First, prepare the fresh king oyster mushrooms by cleaning them thoroughly. Then, tear them into small, bite-sized pieces along the natural grain. Preserving the chewy texture of the mushrooms is key!
Step 2
To the torn mushrooms, add 2 Tbsp of cornstarch and 1/2 tsp of salt. Gently mix with your hands, ensuring the mushrooms are evenly coated. This step helps them become chewier when pan-fried.
Step 3
Heat about 1-2 Tbsp of cooking oil in a pan over medium heat. Spread the seasoned mushroom mixture thinly and evenly across the pan, forming a pizza-like base.

Reduce the heat to medium-low. While pressing down gently with your hands, pan-fry the mushroom base until it’s lightly golden brown on both sides. The moisture from the mushrooms will evaporate, creating a thin and crispy texture. Cook for about 5-7 minutes.

Once the mushroom base is nicely browned, spread 2 Tbsp of pizza sauce thinly over one side. Be careful not to use too much, as it could make the pizza too salty.

Generously sprinkle the mozzarella cheese over the pizza sauce to create a cheesy foundation.

Arrange your prepared toppings evenly over the cheese: the chopped onion, drained canned corn, bite-sized bacon pieces, and shrimp.

Cover the pan tightly with a lid and cook on low heat until the cheese is completely melted and bubbly. This usually takes about 5-10 minutes. Keep the heat low to prevent the bottom from burning.

Once the cheese is perfectly melted and gooey, turn off the heat. Cut the pizza into your desired serving sizes (e.g., 4 or 6 slices) and enjoy immediately while it’s warm. You’ve just made a wonderfully chewy and flavorful mushroom pizza!
