The ‘Baekseon’ and ‘Gonji7ho’ king oyster mushrooms used here are new varieties developed by the Gyeonggi Agricultural Research and Extension Services. ‘Baekseon’ refers to the white variety, and ‘Gonji7ho’ is the common brown king oyster mushroom. You can also use other colorful varieties like yellow oyster mushrooms (‘Sunjeong’) for a visually appealing dish.

Prepare the Baekseon and Gonji7ho king oyster mushrooms by trimming off the tough ends. If the mushroom stems are thick or clumped together, gently tear them apart with your hands into bite-sized pieces. This helps the dressing adhere better.
