Delicious King Oyster Mushroom Pancakes Made with Simple Ingredients
Create a wonderful dish using that one leftover king oyster mushroom in your fridge! These pancakes offer a delightful chewy texture combined with the natural sweetness of vegetables, making them a perfect accompaniment for makgeolli (Korean rice wine) or a hearty side dish for your meal. I’ve included detailed steps so even beginners can easily follow along.
Main Ingredients- 1 King Oyster Mushroom
- 1 Egg
- 1/6 Carrot
- 1/6 Onion
- 1/2 Cheongyang Pepper (optional)
- 1 Tbsp Pancake Mix
- Pinch of Salt
- 2-3 Tbsp Cooking Oil
Cooking Instructions
Step 1
First, carefully prepare all your ingredients. Slice the king oyster mushroom into approximately 1cm thick rounds. Finely mince the carrot and onion to add sweetness and flavor. If you enjoy a bit of spice, finely chop the Cheongyang pepper after removing the seeds. (You can omit this if you prefer less heat!).
Step 2
In a bowl or a zip-top bag, add the sliced king oyster mushrooms. Sprinkle 1 tablespoon of pancake mix over them. If using a zip-top bag, seal it tightly and shake well. If using a bowl, gently toss with a spatula or your hands to coat the mushrooms evenly with the flour mixture. This coating helps the batter adhere better, making the pancakes tastier.
Step 3
In a separate bowl, crack the egg. Add the minced carrot, minced onion, and minced Cheongyang pepper. Add a pinch of salt for seasoning, then whisk everything together with a fork or whisk until well combined, creating a delicious vegetable-egg batter.
Step 4
Now, let’s get cooking! Heat a lightly greased pan over medium-low heat and add 2-3 tablespoons of cooking oil. Dip each flour-coated mushroom slice into the vegetable-egg batter, coating both sides lightly, and then carefully place them in the heated pan. Leave some space between the mushrooms so they don’t stick together, making them easier to separate later.
Step 5
Once the egg mixture starts to set, carefully flip the pancakes with a spatula. Cook for about 2-3 minutes on each side until they turn a beautiful golden-brown color. It’s important to manage the heat to prevent burning. Once they are crisp and deliciously cooked on both sides, your flavorful King Oyster Mushroom Pancakes are ready! They taste best when served hot.
