Let’s make delicious pancakes using king oyster mushrooms, which are affordable and light on calories! Their chewy texture and savory flavor are simply exquisite, making them perfect not only as a side dish for rice but also as a satisfying accompaniment to drinks, or even as a guilt-free diet snack. Made without flour, they are a healthier option.
Ingredients
- 2 King Oyster Mushrooms
- 1 Tbsp finely minced red bell pepper
- 1 Tbsp finely minced orange bell pepper
- 1 Tbsp finely minced scallion (white part preferred)
- 1 Egg
- 2 Pinches of salt
- 1 Pinch of black pepper
Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly under running water. Then, slice them into uniform pieces about 0.5 cm thick. Slicing them too thinly can cause them to break apart easily, so maintaining a consistent thickness is key.
Step 2
Remove the seeds from the red and orange bell peppers and mince them very finely. Similarly, finely mince the scallion, focusing on the white parts for a beautiful color and enhanced flavor.
Step 3
In a bowl, crack and whisk the egg. Add the finely minced bell peppers and scallions. Season with 2 pinches of salt and 1 pinch of pepper to taste. Stir everything together until well combined to create a delicious batter.
Step 4
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Dip each sliced mushroom into the egg batter and carefully place them in the pan. Fry both sides until golden brown and cooked through. Be patient and cook until the edges are nicely browned and the mushrooms are tender inside.
Step 5
Voila! Your vibrant and incredibly chewy king oyster mushroom pancakes are ready. Made without flour, they are wonderfully savory and delicious, a healthy delicacy that everyone from kids to adults can enjoy. They taste best when served warm!
