Main Ingredients
  • 600g King Oyster Mushrooms (small size recommended)
  • 1 cup Water (200ml)
  • 1 pinch Salt (for blanching mushrooms)

Braising Sauce
  • 4 Tbsp Soy Sauce (60ml)
  • 2 Tbsp Sugar (30g)
  • 1 Tbsp Corn Syrup (15ml, for shine and sweetness adjustment)

Cooking Instructions

Step 1

First, prepare the king oyster mushrooms. Using small-sized king oyster mushrooms, as shown in the video, will enhance the texture. Rinse them once thoroughly.

Step 2

Pour 1 cup (200ml) of water into a pot, add the king oyster mushrooms, and bring to a boil over high heat. Once the water boils, reduce the heat to medium and simmer for another 1 minute.

Step 3

Drain the blanched king oyster mushrooms and return them to the pot. Add 4 Tbsp of soy sauce and 2 Tbsp of sugar. Simmer over medium-low heat until the sauce thickens. You don’t need to add extra water, as the mushrooms themselves will release enough moisture to braise. (If the mushrooms are not fresh or have been stored for a long time, adding 1 Tbsp of water can be helpful. Fresh mushrooms release a lot of water, so it’s okay to omit it.)

Step 4

Simmer gently over medium-low heat, allowing the mushrooms to absorb the sauce evenly. Continue to cook until you reach your desired consistency; this can be adjusted according to your preference.

Step 5

Once your desired consistency is reached, add 1 Tbsp of corn syrup for a glossy finish and enhanced flavor. If you prefer less sweetness, you can omit the corn syrup, but following this recipe will result in a perfectly balanced, not too sweet or salty, soy-braised dish.

Step 6

Since these are small king oyster mushrooms, they are delicious to eat as they are after braising. Alternatively, you can tear them apart along the grain for an even chewier texture.
