For today’s recipe, we’ll be using ‘King Oyster Mushrooms,’ also known as ‘Santa Mushrooms.’ As their name suggests, these mushrooms have a texture and flavor similar to meat, making them versatile for various dishes. They are especially delicious when made into pancakes, as their chewy texture is beautifully preserved.

Step 2

First, clean and prepare 100g of king oyster mushrooms, then tear them into bite-sized pieces. Place the torn mushrooms in a bowl, cover with enough water to submerge them, add 1 Tbsp of coarse salt, and let them soak for 3 minutes. This step lightly seasons the mushrooms and helps to reduce the amount of water released when frying, leading to crispier pancakes.

Step 3

While the mushrooms are soaking, finely chop 2 Cheongyang peppers to add a bit of heat. If you prefer less spice, you can substitute them with milder green or red peppers.

After soaking, rinse the king oyster mushrooms thoroughly under running water and gently squeeze out excess moisture. You can also lightly soak the chopped peppers in the same mushroom soaking water before draining them; this adds another layer of savory flavor without extra seasoning.

In a separate bowl, crack 3 large eggs and whisk them until smooth. Whisking the eggs well ensures that the batter adheres nicely to the mushrooms and results in a tender pancake.
