Cooking Instructions

Step 1

To enhance the brownie’s flavor, finely slice the dark couverture chocolate. This will help it melt more easily.

In a clean saucepan, place the butter. Melt it gently using a double boiler method (bain-marie) over low heat, ensuring it melts completely without direct contact with boiling water.

Once the butter is fully melted, add the sliced dark chocolate to the pan. Continue to gently melt them together over low heat, stirring occasionally. It’s crucial to work over low heat to prevent the chocolate from burning.

Step 4

In a separate, clean bowl, combine the eggs, salt, granulated sugar, and brown sugar. Begin whisking them together.

Whisk the egg mixture thoroughly until the sugars are completely dissolved and the mixture becomes pale and slightly thickened. This step is important for the brownie’s texture, so be patient and whisk until the color lightens significantly (about 3-5 minutes). This indicates the sugars have dissolved.
