- 1 Tbsp Soy sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 0.5 Tbsp Minced garlic
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Sesame oil
- Pinch of Black pepper
Cooking Instructions
Step 1
Wash the zucchini thoroughly under running water and prepare it. Use half of the onion.
Step 2
Slice the zucchini into pieces about 0.5cm to 0.7cm thick. Avoid slicing them too thinly, as this will help maintain a good texture after grilling.
Step 3
Thinly slice the onion. To remove its strong flavor and enhance its sweetness, soak the sliced onion in cold water for a while, then squeeze out excess water before use.
Step 4
Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the sliced zucchini and grill until it’s golden brown on both sides. Cook slowly to prevent burning.
Step 5
Transfer the grilled zucchini to a large bowl. Slice the green onion, red chili pepper, and Cheongyang chili pepper diagonally or chop them finely.
Step 6
Add the prepared green onion and chili peppers to the grilled zucchini. Squeeze out the water from the soaked onion slices and add them to the bowl as well.
Step 7
Add 0.5 tablespoon of minced garlic and 1 tablespoon of soy sauce from the seasoning ingredients.
Step 8
Add 1 tablespoon of gochugaru, followed by 1 tablespoon of sesame oil and a pinch of black pepper to finish.
Step 9
This is a special zucchini salad with a chewy texture, offering a different charm compared to freshly stir-fried zucchini!
Step 10
When zucchini is grilled, its moisture evaporates, resulting in a chewy texture that’s more delicious. This seasoned dish makes an excellent side that disappears quickly with a bowl of rice.
Step 11
The crisp texture of the onion complements the chewy texture of the zucchini perfectly, creating a delightful combination. Your delicious #GrilledZucchiniSalad, with its crisp and chewy texture, is complete!
Step 12
Zucchini is known to protect the stomach and spleen, and boost energy. Its sugars are easily digestible, making it beneficial for patients and those with weak digestion. As it’s rich in fat-soluble vitamin A, using oil during cooking helps with nutrient absorption.
Step 13
If you usually enjoy zucchini stir-fry, try this unique grilled and seasoned method this time. You’ll be pleasantly surprised by how delicious it is!
