Main Ingredients

  • 600g Garaetteok (rice cakes for tteokbokki or regular garaetteok)
  • 1 packet Ramen noodles
  • 4 sheets Fish cakes (eomuk)
  • 2 leaves Napa cabbage or regular cabbage
  • 1.2L Water
  • 3 Hard-boiled eggs
  • Pinch of sesame seeds (for garnish)

Tteokbokki Sauce

  • 3 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Soy sauce
  • 2 Tbsp Gochugaru (Korean chili flakes, fine)
  • 4 Tbsp Sugar

Cooking Instructions

Step 1

First, let’s prepare the star of our tteokbokki: the garaetteok (rice cakes). Rinse them lightly under running water to remove any impurities, then cut them into bite-sized pieces (about 5-7 cm). If your garaetteok is hard, soak it in lukewarm water for about 10-15 minutes until softened; this will ensure they cook up tender and delicious.

Now, let’s make the key to delicious tteokbokki: the sauce! In a medium bowl, combine 3 tablespoons of gochujang, 4 tablespoons of soy sauce, 2 tablespoons of fine gochugaru (chili flakes), and 4 tablespoons of sugar for sweetness. Mix everything thoroughly with a spoon or whisk until well combined and there are no lumps.

Next, chop the vegetables and fish cakes into bite-sized pieces to add flavor and texture. Cut the cabbage into larger pieces so it’s easy to eat with the broth, and slice the fish cakes into triangles or squares.

In a wide, deep pot, pour in 1.2 liters of fresh water. Add the prepared tteokbokki sauce and stir to dissolve it evenly in the water. Place the pot on the stove over high heat and bring it to a boil.

While the tteokbokki broth is coming to a boil, cook the ramen noodles separately. Fill another pot with plenty of water and add the ramen noodles. To prevent them from becoming too mushy, it’s best to cook them slightly less than fully done (about 70-80% cooked). Drain the noodles and rinse them under cold water.

Once the broth in the pot is boiling vigorously, add the prepared garaetteok first. If you are using very soft, fresh tteok, you can add all the ingredients (cabbage, fish cakes, etc.) at this stage. However, if the rice cakes are a bit firm, it’s better to add them first to let them soften.

When the rice cakes have softened and are well-cooked, add the chopped cabbage and fish cakes to the pot. These ingredients will enrich the broth’s flavor and add more substance.

Reduce the heat to medium and let everything simmer and cook thoroughly, allowing the ingredients to meld with the sauce. Remember to stir gently from time to time to prevent the rice cakes from sticking to the bottom of the pot.

When the broth has thickened slightly and the fish cakes and rice cakes are well-coated with the sauce, add the separately cooked ramen noodles. Gently loosen the noodles to ensure they mix well with the sauce.

Finally, place the pre-boiled eggs on top of the tteokbokki and let it simmer for a little longer. The eggs will absorb the delicious broth flavor, making the dish even more satisfying and visually appealing.
