Main Ingredients
  • 400g Flat glass noodles
  • 500g Sliced pork for Japchae (tenderloin or neck)
  • 1 medium carrot
  • 2 onions
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 2 king oyster mushrooms
  • 4 sheets flat fish cakes

Seasoning & Others
  • 4 Tbsp soy sauce
  • 2 Tbsp perilla oil
  • 1 Tbsp sugar
  • A pinch of ground black pepper
  • 1 Tbsp minced garlic
  • 5 Tbsp pre-made pork marinade for Japchae (if unavailable, substitute with soy sauce, sugar, garlic)
  • 1/2 cup soy sauce for boiling noodles

Cooking Instructions

Step 1

Prepare 500g of sliced pork for Japchae and place it in a bowl. Add 5 Tbsp of pre-made pork marinade, 2 Tbsp of soy sauce, 1 Tbsp of minced garlic, and a pinch of black pepper. Mix well and let it marinate for at least 1 hour. (Marinating overnight will enhance the flavor significantly.)

Step 2

Soak the flat glass noodles in lukewarm or warm water for about 15-20 minutes until softened. Avoid rinsing them immediately in cold water; soaking helps them achieve a chewy texture.

Step 3

Julienne the vegetables (carrot, onion, bell peppers), king oyster mushrooms, and flat fish cakes to a thickness similar to the flat glass noodles. Cutting them to a uniform size ensures they cook evenly and look appealing.

Step 4

Heat a large pan with a little cooking oil. Start by sautéing the onions until translucent, then add the carrots and stir-fry. Next, add all the bell peppers. Sprinkle a pinch of salt over each ingredient as you stir-fry to bring out their sweetness and season them appropriately. Stir-fry until the vegetables are slightly softened, then remove them to a separate plate and let them cool.

Step 5

In the same pan, add the marinated pork and stir-fry until almost cooked through. Once the pork is nearly done, create a space in the center of the pan and add the sliced king oyster mushrooms and flat fish cakes. Stir-fry them together with the pork until everything is cooked. Combine with the previously stir-fried vegetables and let it cool slightly.

Step 6

In a large pot, add water to fill it halfway and pour in 1/2 cup of soy sauce for boiling the noodles. Once the water boils, add the soaked flat glass noodles. Boil until the noodles become transparent and chewy (approximately 7-10 minutes, adjust cooking time based on noodle type). Drain the cooked noodles using a colander without rinsing them under cold water. Immediately add them to a large bowl containing the stir-fried vegetables, pork, and fish cakes.

Step 7

Drizzle 2 Tbsp of soy sauce and 2 Tbsp of perilla oil over the noodles. Gently mix everything to coat the noodles with the seasoning and help the ingredients meld together.

Step 8

Now, wear a disposable glove, followed by a pair of kitchen gloves over it. Thoroughly mix all the ingredients in the bowl by hand. Mixing by hand ensures the seasoning is evenly distributed and prevents the noodles from clumping. Taste and adjust the seasoning with additional soy sauce if needed.
