  • 2 sheets of square fish cake (approx. 150g)

Cooking Instructions

Step 1

First, thoroughly wash the garlic scapes under running water and pat them dry with a paper towel. Cut the dried garlic scapes into manageable pieces, about 3-4 cm in length. If the garlic scapes are thick, you can halve them lengthwise. This preparation ensures even seasoning and cooking.

Step 2

Rinse the square fish cakes and cut them into bite-sized pieces, similar in size to the garlic scapes or slightly smaller. For a chewier texture, you can briefly blanch the fish cakes in hot water before cutting to remove excess oil.

Step 3

Now, let’s begin stir-frying. Heat about 1-2 tablespoons of cooking oil in a pan over medium heat. Add the prepared garlic scapes and fish cakes to the pan. Cooking over medium heat helps prevent burning and brings out the best flavors.

Step 4

Once the garlic scapes and fish cakes start to soften slightly, it’s time to add the seasoning. Pour in 5 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, and 1 tablespoon of corn syrup. Adding the sauces around the edges of the pan can help them coat the ingredients more effectively.

Step 5

Reduce the heat to medium-low and stir-fry everything together with a spatula or chopsticks. Make sure to coat all the ingredients evenly with the sauce. Continue to stir-fry for about 3-5 minutes, or until the garlic scapes are tender-crisp and the fish cakes are glossy, being careful not to let the sauce burn. You’ll notice a delicious aroma developing.

Step 6

Finally, sprinkle in a pinch of black pepper to your liking and a generous amount of toasted sesame seeds for added nutty flavor and visual appeal. Give it a final toss to combine everything. Your delicious stir-fried garlic scapes with fish cake is now ready to serve! It makes a wonderful accompaniment to a bowl of warm rice.
