Chewy Fern and Soft Rice Noodles Stir-Fry: A Deliciously Simple Recipe
Hearty and Flavorful Fern and Rice Noodle Stir-Fry
Whip up a quick and satisfying meal using ferns and rice noodles from your pantry! This stir-fry is simple yet packed with rich flavors. Using ‘dad’s spoon’ measurements, anyone can easily follow along. The chewy texture of the ferns combined with the soft rice noodles makes for a perfect meal or even a tasty snack. Main Ingredients
- 1 handful of dried or cooked fern (approx. 50g)
- 2 handfuls of dried rice noodles (approx. 100g)
- 1 Tbsp soy sauce (jin ganjang)
- 3 Tbsp perilla oil (deulgireum)
- 1/2 Tbsp sesame oil (chamgireum)
- 1 Korean chili pepper (optional, for added spice)
- 2 Tbsp chopped green onion
Seasoning
- 1 Tbsp soup soy sauce (guk ganjang) or fish sauce
- 1 Tbsp minced garlic
- 1 Tbsp soup soy sauce (guk ganjang) or fish sauce
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
Prepare the rice noodles: take about two handfuls, roughly the size of a 500-won coin. Soak them in cold water for about 20 minutes until they are fully softened. (Tip: Soaking for too long can make the noodles mushy, so be sure to stick to the recommended time!)
Step 2
In a bowl, place the soaked ferns and mix them with 1 Tbsp of minced garlic and 1 Tbsp of soup soy sauce to season. Ensure the seasoning is well absorbed by the ferns.
Step 3
Heat 2 Tbsp of perilla oil in a pan over medium-low heat.
Step 4
Add the seasoned ferns to the pan. Pour in about half a cup of water. (Although ferns release moisture as they cook, adding a little water initially prevents sticking and helps them cook tenderly.)
Step 5
Cover the pan and let the ferns simmer over medium-low heat for about 5 minutes until they become tender. Stir occasionally to ensure even cooking and seasoning distribution.
Step 6
Remove the lid and stir-fry for about 10 seconds over medium-low heat to lightly evaporate any excess moisture. (You don’t need to dry it completely. Since it was simmered with the lid on, there’s moisture remaining, so this step is just to gently reduce it.)
Step 7
Add the softened rice noodles to the pan with the cooking ferns. Stir-fry briefly for 1 minute to allow the noodles and ferns to combine well. (Avoid soaking the rice noodles for more than 30 minutes, as the moisture in the pan will cook them sufficiently.)
Step 8
Add the chopped Korean chili pepper and stir-fry. Feel free to add more if you prefer a spicier dish.
Step 9
Finally, add the chopped green onions and 1 Tbsp of soy sauce (jin ganjang). Stir-fry for another 30 seconds until the green onions become fragrant.
Step 10
Turn off the heat and drizzle with 1/2 Tbsp of sesame oil for a nutty aroma.
Step 11
Transfer the delicious fern and rice noodle stir-fry to a plate. Enjoy immediately while warm!
