Chewy Enoki Mushrooms and Rice Cakes Wrapped in Savory Bacon
Easy Bacon-Wrapped Enoki Mushroom and Tteok Recipe for a Delicious Side Dish
Today, I’m sharing a delightful recipe for Bacon-Wrapped Enoki Mushrooms and Tteok (rice cakes). This dish was originally planned for my husband’s birthday meal. Although I couldn’t include it due to time constraints, its attractive appearance and simple preparation make it perfect not just as a side dish, but also for birthday celebrations or when entertaining guests. It’s incredibly easy – just roll and grill! Your cooking skills won’t be a barrier to creating this delicious treat. The salty, savory flavor of the bacon pairs wonderfully with the tender, chewy enoki mushrooms. Adding tteok (rice cakes) makes it even more satisfying and delicious. It’s also a great recommendation for a simple alcoholic beverage accompaniment. The key to making perfect bacon rolls is to ensure they hold their shape while cooking. Using toothpicks provides 100% security, and when grilling, placing the seam side of the bacon down helps it stick together beautifully, resulting in an appealing presentation.
Ingredients (Makes 10 rolls)- 5 strips bacon
- 10 tteokbokki tteok (rice cakes)
- 1 pack enoki mushrooms
Garnish- A pinch of parsley flakes
- A pinch of black pepper
- A pinch of parsley flakes
- A pinch of black pepper
Cooking Instructions
Step 1
First, let’s prepare the enoki mushrooms. We’ll use one pack of enoki mushrooms. Remove the plastic packaging and trim off any dirty parts from the base.
Step 2
When trimming, it’s best to cut them in a way that the base remains slightly connected. This helps the mushrooms maintain their shape when wrapped with bacon, leading to neater rolls. Divide the enoki mushrooms in half, then further divide each half into 5 portions, resulting in 10 portions in total.
Step 3
Gently rinse the separated enoki mushroom portions under running water. Then, pat them thoroughly dry with paper towels. Removing excess moisture is important for even cooking and preventing sogginess.
Step 4
Take 5 strips of bacon and cut each strip in half. Lightly dab the bacon strips with paper towels to remove any excess grease. It’s recommended to use thinner bacon, as thicker strips can be more challenging to roll tightly.
Step 5
Now, let’s assemble the rolls. Lay a piece of bacon flat. Place a portion of the prepared enoki mushrooms and a tteokbokki tteok (rice cake) onto the bacon. Then, carefully roll them up tightly, similar to making a sushi roll.
Step 6
It’s crucial to roll the bacon tightly. As the ingredients cook, they will shrink and soften, so a snug roll will ensure the final product holds its shape well and looks appealing.
Step 7
Once rolled, secure the center of each bacon roll with a toothpick. This is essential to prevent the rolls from unraveling during the cooking process.
Step 8
Here are the securely rolled and toothpicked bacon rolls, ready for cooking!
Step 9
We’ll be cooking using the bacon’s own fat, so no additional cooking oil is needed. Heat a pan over medium heat. Place the bacon-wrapped enoki mushroom and tteok rolls into the hot pan and cook until golden brown and crispy. A key tip here is to place the seam side of the bacon down first. This allows the bacon to seal itself as it cooks. Let it cook undisturbed for 1-2 minutes to achieve a good sear and seal.
Step 10
If any parts of the roll seem loose or aren’t holding their shape perfectly, gently press down on them with a spatula while they are cooking. This helps the seam to crisp up and secure the roll.
Step 11
Ensure the bacon is cooked until nicely browned and crispy. This ensures that the enoki mushrooms and rice cakes inside become tender and fully cooked. If you notice any uncooked parts, you can carefully remove the toothpick temporarily to expose those areas to the heat for even cooking.
Step 12
Once perfectly cooked, transfer the delicious bacon-wrapped enoki mushroom and tteok rolls to a serving plate. Sprinkle with a pinch of parsley flakes and black pepper for a final touch of flavor and visual appeal. Enjoy this delightful dish as a satisfying side or a sophisticated appetizer!
