Irresistibly Delicious Enoki Mushroom Pancakes Recipe

I made these savory pancakes when I felt a bit peckish before a meal. I added a touch of fish sauce, and I found them incredibly delicious, almost like they had seafood in them! The chewy texture and rich flavor are truly delightful.

Main Ingredients
  • 3 bunches of enoki mushrooms
  • 1/5 carrot
  • 1 green chili pepper
  • 5 Tbsp all-purpose flour
  • 5 Tbsp pancake mix
  • 2 Tbsp tempura flour (optional)
  • 1 egg

Seasoning
  • 1 Tbsp fish sauce

Cooking Instructions

Step 1

Trim about 1-2 cm from the bottom of the enoki mushroom bunches and rinse them thoroughly. Separate the mushrooms into individual strands. Cut the separated mushrooms into approximately 2 cm lengths. Using scissors can make this step much easier.

Step 2

Peel the carrot and julienne it thinly. Remove the seeds from the green chili pepper and julienne it as well. These vegetables will add color and a pleasant crunch to the pancakes.

Step 3

In a bowl, combine 5 Tbsp of all-purpose flour and 5 Tbsp of pancake mix. The 2 Tbsp of tempura flour is optional but recommended for an extra crispy and chewy texture (you can also use up any leftover tempura flour you have). Mix the dry ingredients evenly with your hands or a spatula until no dry flour is visible, creating the base for your batter.

Step 4

Crack 1 egg into the batter base and add 1 Tbsp of fish sauce. The fish sauce enhances the umami, giving the pancakes a flavor reminiscent of seafood. Stir everything together until well combined to complete the batter.

Step 5

Heat a generous amount of cooking oil in a non-stick skillet over medium heat. Once the oil is hot, scoop about one tablespoon of batter at a time and drop it onto the pan, forming small, round pancakes. Avoid making them too thin; bite-sized pancakes are easier to handle and enjoy.

Step 6

Cook the pancakes over medium-high heat until golden brown on both sides. Ensure they are cooked through, allowing the chewy enoki mushrooms and the savory batter to meld together. Cooking over medium-high heat, rather than high heat, prevents burning and ensures the inside is cooked thoroughly. Enjoy these delicious enoki mushroom pancakes while they are warm!
