First, trim the very bottom off the enoki mushrooms and rinse them thoroughly under running water. Gently pat them dry, then chop them into bite-sized pieces, about 2-3 cm long. Finely chop the white part of the green onion. This helps to separate the mushroom clusters and adds a lovely aromatic touch.

In a bowl, crack the 2 fresh eggs. Add a pinch of salt and pepper to season. You can also add a pinch of dried parsley flakes for a prettier color and extra flavor. Whisk the eggs gently with chopsticks or a whisk until well combined. Avoid over-whisking; a gentle mix is best.
