First, trim the very bottom off the enoki mushrooms and rinse them thoroughly under running water. Gently pat them dry, then chop them into bite-sized pieces, about 2-3 cm long. Finely chop the white part of the green onion. This helps to separate the mushroom clusters and adds a lovely aromatic touch.
