How to Make a Simple and Healthy Dried Vegetable Namul Salad
Dried namul (seasoned vegetables) are often sold at supermarkets and markets. They are easy to store, so you can buy them in bags and make a fresh salad whenever you like. 😀 It’s perfect when you need a simple, healthy side dish. In this recipe, I’ve made a salad using two types of dried namul: dried fernbrake and dried aster scaber.
Ingredients- 10 g Dried Fernbrake (Gosari)
- 10 g Dried Aster Scaber (Chwinamul)
Seasoning for Namul Salad- 1 Tbsp Soup Soy Sauce (Guk-ganjang)
- 1/2 Tbsp Sesame Oil
- 1/4 Tbsp Minced Garlic
- 1/2 Tbsp Toasted Sesame Seeds
- Pinch of Salt
- 1 Tbsp Soup Soy Sauce (Guk-ganjang)
- 1/2 Tbsp Sesame Oil
- 1/4 Tbsp Minced Garlic
- 1/2 Tbsp Toasted Sesame Seeds
- Pinch of Salt
Cooking Instructions
Step 1
Prepare the dried namul. The boiling method is similar for most types of dried vegetables.
Step 2
Boil enough water in a pot to fully submerge the namul.
Step 3
Add the dried namul to the boiling water and boil until the stem parts are sufficiently tender. You’ll want them to be soft enough to be easily pierced with a fork.
Step 4
Fernbrake stems can be tougher than other namul, so boil them a little longer to ensure they become tender.
Step 5
Once boiled, let the namul cool down in the same boiling water. This helps to remove any bitterness or astringency and makes them softer.
Step 6
When the water has cooled down somewhat, drain the namul and rinse them thoroughly under cold running water. This step cleanses the vegetables.
Step 7
After rinsing, place the namul in a bowl filled with cold water and soak for at least 1 hour, or longer if desired, until thoroughly rehydrated. This step is crucial for achieving a good texture.
Step 8
Once the namul is well-soaked, squeeze out as much water as possible by hand. Ensuring the namul is well-drained is key to a flavorful salad. It’s now ready to be seasoned.
Step 9
In a separate bowl, combine all the seasoning ingredients: soup soy sauce, sesame oil, minced garlic, and toasted sesame seeds. Mix well to create the dressing.
Step 10
Add the prepared namul to the dressing and gently mix with your hands, ensuring the seasoning is evenly distributed. Continue to gently toss and massage the vegetables to coat them well.
Step 11
This dried namul salad, seasoned to your preference, makes a wonderful side dish. It’s also fantastic as a topping for bibimbap, adding a delightful chewy texture and savory flavor. Enjoy!
