Step 1
First, crack 2 eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them with 1/4 teaspoon of salt until well combined. This helps the egg wash become smooth and evenly seasoned for a tastier result.

It’s important to clean the dried squid properly. Start by peeling the skin off the body of the squid. Then, peel the skin off the tentacles as well. Peeling the skin will make the pancake more tender.

Place the peeled dried squid in a bowl. Add enough water to fully submerge the squid. Adding a pinch of salt here will help adjust the squid’s saltiness and make it even more tender.

Soak the squid until it becomes sufficiently tender. During the summer, soak it in the refrigerator for about 2-3 hours. In winter, you can soak it at room temperature for about half a day. Adjust the soaking time based on the squid’s texture.

Remove the softened squid from the water and score it. For the body, make thin diagonal cuts with a knife down the center, and use scissors to make thin cuts along the edges. For the tentacles, gently pound them with the back of a knife or a tenderizer to soften them. This scoring and tenderizing helps the seasonings penetrate better and improves the chewy texture.

Lightly season the prepared squid with salt and pepper. Next, coat the squid evenly with pancake mix, followed by the beaten egg wash. The key is to apply a thin, even coating of batter.

Heat a pan over medium-low heat and add a generous amount of cooking oil. Place the battered squid into the hot oil and fry on both sides until golden brown and crispy. Your delicious dried squid pancake is ready when it’s nicely browned! It tastes best when served immediately while hot.
