Chewy Dried Shrimp and Aromatic Garlic Scapes Stir-Fry
(Easy Side Dish!) Stir-Fried Dried Shrimp with Garlic Scapes!
We tried a simple stir-fry using garlic scapes, a seasonal ingredient, with tender dried shrimp.
Ingredients- Garlic scapes 400-500g
- Dried small shrimp 100g
- Green onion (white part) 1/2 stalk
Seasoning- Olive oil 2 Tbsp
- Oyster sauce 1 Tbsp
- Soy sauce 2-3 Tbsp
- Oligosaccharide syrup 2-3 Tbsp
- Sesame oil a little
- Sesame seeds a little
- Olive oil 2 Tbsp

Cooking Instructions
Step 1
After purchasing fresh garlic scapes, wash them thoroughly. Trim off the flower buds (the part with seeds) and cut them into bite-sized pieces. Ensure you clean them well before cutting!
Step 2
Prepare the dried small shrimp. You can lightly rinse them under running water to remove any dust.
Step 3
Finely chop the white part of the green onion. This will add a fragrant aroma to the dish.
Step 4
Heat 2 Tbsp of olive oil in a pan over medium-low heat. Add the chopped green onion and stir-fry for about 1 minute until fragrant, being careful not to burn it. This step helps to infuse the oil with onion flavor.
Step 5
Add the prepared garlic scapes to the pan. Stir well to combine them with the fragrant oil. Sauté for 2-3 minutes until the garlic scapes start to soften slightly.
Step 6
Add the dried small shrimp, 1 Tbsp oyster sauce, 2-3 Tbsp soy sauce, and 2-3 Tbsp oligosaccharide syrup. Stir everything together well and continue to stir-fry for 4-5 minutes. Adjust the sweetness according to your preference by modifying the amount of oligosaccharide syrup and soy sauce. It’s best to stir-fry over medium-high heat to keep the garlic scapes slightly crisp.
Step 7
Turn off the heat. Drizzle with sesame oil and sprinkle with sesame seeds. Your delicious dried shrimp and garlic scape stir-fry is ready!
Step 8
Transfer the finished stir-fry from the pan to a serving dish immediately. Allowing it to cool slightly will enhance the flavors and textures. It’s delicious served warm over rice or as a side dish!
