  • 300g dried shiitake mushrooms
  • 1 Tbsp minced garlic
  • 2 Tbsp fish sauce
  • 1 tsp salt (adjust to taste)
  • 1 Tbsp chopped green onion
  • 2 Tbsp cooking oil or olive oil

First, prepare 300g of dried shiitake mushrooms. Soak them in enough cold water to cover until they become plump and slightly rehydrated, usually about 20-30 minutes. If the mushrooms are very hard, you can soak them for a bit longer. Once they are fully softened, squeeze out excess water by hand and slice them into bite-sized pieces. Cutting them too large can make them difficult to eat, so aim for manageable pieces.

Now, let’s start stir-frying! Heat 2 tablespoons of cooking oil or olive oil in a skillet over medium heat. Add the rehydrated shiitake mushrooms and stir-fry until they begin to turn slightly golden brown. Then, add 1 tablespoon of minced garlic and continue to stir-fry until the garlic becomes fragrant. Be careful not to burn the garlic during this step.

As the mushrooms and garlic begin to combine, add 2 tablespoons of fish sauce for a burst of umami flavor. Stir well to coat the mushrooms evenly with the sauce. Cooking for another 1-2 minutes will allow the mushrooms to absorb the savory notes of the fish sauce, deepening the overall taste.

It’s time to season the dish. Add 1 teaspoon of salt to adjust the final flavor. However, since fish sauce can vary in saltiness, it’s best to taste as you go and add salt gradually rather than all at once. If you prefer a saltier taste, add a little more; if you prefer it milder, reduce the amount.
