First, prepare 200g of dried radish.

Soak the prepared dried radish in plenty of hot water for about 10 minutes until softened. Then, drain thoroughly using a sieve. This process will make the radish suitably tender while maintaining its chewy texture.

Now, let’s prepare the dried chili leaves. Soak the dried chili leaves in cold water until they become tender. Soaking them sufficiently will improve their texture.
Step 4
Briefly blanch the softened dried chili leaves in boiling water. Be careful not to overcook them, as they can become mushy. After blanching, drain them well using a sieve.

Add 2 Tbsp of gochugaru (chili powder) to the drained dried radish and mix well with your hands. Marinating with chili powder first helps the radish absorb the seasoning better and gives it a beautiful color.

Add the prepared dried chili leaves to the chili-marinated dried radish and prepare to mix them together.

Now, add all the seasoning ingredients (Gochujang 1 Tbsp, Sesame Oil 1 Tbsp, Plum Extract 1 Tbsp, Minced Garlic 1/2 Tbsp, Soy Sauce 1 Tbsp, Sugar 1/2 Tbsp, Oligosaccharide 1 Tbsp) and mix everything gently with your hands until well combined.
