Essential Ingredients

  • 50g All-purpose flour
  • 50g Dark chocolate
  • 30g Unsalted butter
  • 20g Sugar
  • 10g Unsweetened cocoa powder
  • 1 Large egg (room temperature)
  • 1/3 tsp Baking powder
  • 1/4 tsp Vanilla powder (or a dash of vanilla extract)
  • 1 Pinch of salt

Cooking Instructions

First, melt the 50g of dark chocolate and 30g of unsalted butter together. You can do this using a microwave in short bursts or by setting the bowl over a saucepan of simmering water (double boiler method). Stir until smooth and well combined.

In a separate bowl, crack the room temperature egg. Add the 1/4 tsp of vanilla powder (or a dash of vanilla extract) and 20g of sugar. Lightly whisk just until the sugar is incorporated and the mixture is lightly combined. Avoid over-whisking.

Pour the lightly whisked egg mixture into the melted chocolate and butter mixture. Gently stir with a spatula until everything is smoothly incorporated without any lumps.

Now it’s time to add the dry ingredients. Sift the 50g of flour, 10g of unsweetened cocoa powder, 1/3 tsp of baking powder, and a pinch of salt directly over the chocolate mixture. Sifting helps prevent lumps and ensures a smoother batter.

Using a spatula or silicone scraper, gently fold the dry ingredients into the wet ingredients until just combined. Stop mixing as soon as you no longer see any streaks of flour. Overmixing can lead to tough cookies.

Transfer the cookie dough into a piping bag. Snip off the tip and pipe mounds of dough onto your baking sheet or directly into the air fryer basket. Pipe them with a slight press, allowing them to spread just a little.

Aim for a size similar to macarons. Piping them too large might result in uneven baking, while too small can cause them to burn quickly. Try to keep them consistently sized.

Once piped, gently press down any slightly domed tops with the back of a spoon for a more even surface. Place them in a preheated air fryer set to 170°C (340°F) and bake for approximately 7 minutes. Cooking times can vary depending on your air fryer model, so keep an eye on them during the last couple of minutes.
