We’ve made a delicious one-bowl fried rice with simple cuttlefish. This nutritious cuttlefish and garlic fried rice perfectly balances the chewy texture of cuttlefish with the crispness of garlic and fluffy scrambled eggs, making it a satisfying meal that requires no side dishes. Main Ingredients
- 1 Cuttlefish
- 2 Tbsp minced garlic (for a rich garlic flavor)
- 2 Tbsp minced onion (adds sweetness and depth)

- 2 Tbsp minced sausage (adds a savory touch that kids love)
- 1/3 tsp chopped Chinese chives (for garnish)
- 1/2 bowl cooked rice (cold rice works too!)
- 2 Eggs
- 1 Tbsp olive oil (for a fragrant finish)
- 1 Tbsp flour (for cuttlefish preparation)
- 2 cups Water
- 1 Tbsp Soju (to remove fishy odor)
Seasoning
- 2/3 Tbsp oyster sauce (for umami)
- 2/3 Tbsp oyster sauce (for umami)
Cooking Instructions
Step 1
Prepare fresh, domestic cuttlefish. The freshness of the cuttlefish is key to the flavor of the fried rice.
Step 2
Have all the necessary ingredients ready and visible. Prepping them beforehand will make the cooking process much smoother.
Step 3
Clean and prepare the cuttlefish thoroughly. Slit open the belly of the cuttlefish and remove the hard cartilage from the back. Also, remove the eyes, ink sac, beak from the tentacles, and the outer skin. Sprinkle 1 Tbsp of flour over the prepared cuttlefish and gently knead it; this helps to remove surface impurities, allowing for a cleaner rinse. Rinse thoroughly under cold water several times.
Step 4
To remove any fishy odor and tenderize the cuttlefish, we’ll briefly blanch it. Pour 2 cups of water into a pot and bring it to a boil. Once boiling, add 1 Tbsp of soju. Add the prepared cuttlefish to the boiling water and blanch for about 30-40 seconds only, then immediately remove it. Be careful not to over-blanch, as it can become tough.
Step 5
Mince the vegetables and chop the cuttlefish into bite-sized pieces for the fried rice. Finely mince the green onion, onion, garlic, and sausage. Chop the blanched cuttlefish into bite-sized pieces as well.
Step 6
Heat 1 Tbsp of olive oil in a pan over medium-low heat. Add the minced green onion, onion, and garlic, and sauté until fragrant. Sautéing for about 3-4 minutes will bring out the natural sweetness and aroma of the vegetables.
Step 7
Now, add the minced sausage and chopped cuttlefish to the pan and stir-fry together. Cook for about 1-2 minutes, allowing the ingredients to meld together.
Step 8
Add the 1/2 bowl of cooked rice and 2/3 Tbsp of oyster sauce. Stir-fry to ensure the seasoning is evenly distributed throughout the rice. It’s important to break up any clumps of rice with your spatula as you stir-fry. Taste and add a tiny bit more oyster sauce if needed.
Step 9
Transfer the delicious fried rice to a serving bowl. The enticing aroma is already filling the air! It’s a satisfying meal as is.

Let’s make some delicious scrambled eggs to accompany it. Crack 2 eggs into a bowl and whisk them well.

Pour the whisked eggs into a clean pan. Once the bottom starts to set, quickly stir with chopsticks to create fluffy scrambled eggs. Avoid overcooking to maintain a soft texture.
