Often called ‘noodles from the sea,’ Kkosiraegi boasts a delightful chewy and crispy texture, resembling long strands of pasta. When seasoned with a sweet and sour sauce or served in a refreshing cold soup, it transforms into a unique and satisfying dish. It’s an excellent alternative for those on a diet looking for a healthy and flavorful meal!
Main Ingredients- 250g Salted Kkosiraegi (sea strings), rinsed
- 1/2 cucumber
- 100g radish (a small piece)
Seasoning- 1 Tbsp red chili powder
- 1.5 Tbsp gochujang (red chili paste)
- 2 Tbsp rice wine (mirin)
- 3 Tbsp plum extract
- 2 Tbsp vinegar
- 1/2 Tbsp minced garlic
- 1 Tbsp sesame seeds (toasted)
- A dash of sesame oil
- 1 Tbsp red chili powder
- 1.5 Tbsp gochujang (red chili paste)
- 2 Tbsp rice wine (mirin)
- 3 Tbsp plum extract
- 2 Tbsp vinegar
- 1/2 Tbsp minced garlic
- 1 Tbsp sesame seeds (toasted)
- A dash of sesame oil
Cooking Instructions
Step 1
The ingredients for this recipe are quite simple. Feel free to add other fresh vegetables you have on hand according to your preference. If you don’t like spicy food, you can omit the chili peppers.

First, thoroughly rinse the salt off the salted Kkosiraegi. Then, soak the Kkosiraegi in cold water for about 10 to 15 minutes to remove excess saltiness. Taste a small piece to check if the salt level is just right.
Step 3
Blanch the Kkosiraegi in boiling water for just about 1 minute. As soon as you see the color change, immediately remove them from the water to maintain their delightful chewy texture without becoming too soft.
Step 4
Quickly transfer the blanched Kkosiraegi to cold water to cool them down completely. Then, drain them thoroughly in a sieve to remove excess water. This ensures the seasoning will adhere well.
Step 5
Slice the cucumber and radish into thin, long julienne strips that match the length of the Kkosiraegi. Finely chop the chili peppers. Cut the prepared Kkosiraegi into bite-sized pieces (about 5-7 cm long) for easier eating.
Step 6
In a mixing bowl, combine the Kkosiraegi, julienned radish and cucumber, and chopped chili peppers. Add all the remaining seasoning ingredients and mix gently until everything is well coated. It’s that simple!

You can adjust the amount of sesame oil to your liking. If you prefer a lighter, fresher taste, feel free to omit the sesame oil entirely. Customize it to your preference!
