Hearty Clam and Chive Pancake

When facing a lack of side dishes, I decided to make a nutritious pancake using clam meat and fresh chives. This recipe brings together the chewy texture of clams with the refreshing aroma of chives for a delightful meal or snack.

Main Ingredients
  • 1 cup clam meat (rinsed and drained)
  • 2 cups pancake mix (buchim garu)
  • 1/2 bunch fresh chives, cut into 1.5-inch lengths
  • A small amount of carrot, julienned (about 1/4 carrot)
  • 1/2 red chili pepper, finely chopped
  • 2 green chili peppers, finely chopped
  • 1 large egg
  • 1.5 cups water (adjust for batter consistency)
  • Cooking oil, generously for frying

Seasoning & Others
  • 1 tsp fish sauce or tuna extract (for umami)
  • 1/2 Tbsp gochujang (optional, for added flavor and color)

Cooking Instructions

Step 1

First, prepare the vegetables. Julienne the carrot thinly. Finely chop the red and green chili peppers, removing seeds if preferred. Cut the aromatic chives into approximately 1.5-inch pieces; this size helps retain a pleasant texture.

Step 2

Rinse the clam meat thoroughly under running water. Drain it well in a sieve. Ensuring the clam meat is well-drained is crucial for preventing a watery batter and achieving a crispy pancake.

Step 3

Now, let’s make the delicious batter. In a bowl, combine 2 cups of pancake mix with 1.5 cups of water. Whisk until smooth, ensuring there are no lumps. Crack in 1 large egg and whisk it into the batter until well combined. (For a touch of heat and deeper flavor, you can add 1/2 Tbsp of gochujang at this stage.)

Step 4

Add the prepared julienned carrots, chopped chili peppers, chives, and the drained clam meat to the batter. Stir everything together with a spatula until all ingredients are evenly distributed. Finally, stir in 1 tsp of fish sauce or tuna extract. Your flavorful batter is ready!

Step 5

Heat a generous amount of cooking oil in a frying pan over medium heat. Ladle portions of the batter onto the hot pan, spreading them out into thin, round shapes. Keeping the pancakes relatively thin will ensure they cook through evenly and become delightfully crispy.

Step 6

Once the bottom of the pancake turns golden brown and crispy, carefully flip it over using a spatula. Cook the other side until it’s also golden brown and crisp. Keep an eye on the heat to prevent burning.

Step 7

Transfer the perfectly cooked clam and chive pancakes to a serving plate. Present them attractively, and you’ll have a delicious and satisfying meal that everyone can enjoy. They are best served hot and fresh!
