Chewy Clam and Vegetable Porridge

Main Ingredients- 1 cup short-grain rice (approx. 150g)
- 1 cup shelled clams (purged and ready)
- 30g fresh chives
- 1/3 medium onion
- 1/4 medium carrot
- Pinch of salt or soup soy sauce (to taste)
- 1 tablespoon sesame oil
- 4 cups water (approx. 800ml)
Cooking Instructions
Step 1
First, rinse the rice thoroughly and soak it in cold water for about 30 minutes. Using soaked rice will make the porridge softer and cook faster.
Step 2
Time to prepare the vegetables. Wash and peel the onion and carrot, then mince them very finely. Wash the chives, pat them dry, and finely chop them. The chives will be added at the end for a fresh aroma.
Step 3
Heat a deep pot over medium heat. Once the pot is warm, add 1 tablespoon of sesame oil. Then, add the soaked rice and shelled clams. Stir-fry over medium heat for about 2-3 minutes until the rice grains turn translucent. Pre-toasting the rice enhances the nutty flavor of the porridge.
Step 4
Once the rice grains start to become translucent, pour in the 4 cups (800ml) of water you prepared and bring it to a boil over high heat. When it boils, reduce the heat to medium-low and simmer for about 10 minutes until the rice grains are tender.
Step 5
When the rice grains have softened a bit, add the minced onion and carrot. Continue to simmer over medium-low heat for another 15 minutes, allowing the vegetables to cook until tender. Finally, add the chopped chives and stir gently. Avoid overcooking after adding the chives.
Step 6
Lastly, season the porridge with soup soy sauce or salt to your liking. Adjust the seasoning as needed. Once seasoned, simmer for another moment until the delicious clam and vegetable porridge is ready. Enjoy it while it’s warm!
