Cooking Instructions
Step 1
To begin making this delicious clam and Korean wild chive salad, please refer to the previous recipe (Ref ID: @7018895) for detailed instructions on how to purge, clean, and boil the clams. Fresh, well-prepared clams are key to a great flavor!
Step 2
After boiling the clams, carefully remove all the shells and extract only the clam meat. This ensures the dressing can fully penetrate and flavor the succulent clam meat.
Step 3
Prepare 50g of fresh Korean wild chives, which is roughly a generous handful. Gently press the bulbous ends of the chives with the back of a knife; this helps them to blend better with the dressing and releases their fragrant aroma.
Step 4
Chop the prepared Korean wild chives into bite-sized pieces. Avoid chopping them too finely, as this can diminish the texture. Aim for pieces that are easy to eat in one bite.
Step 5
Now, let’s make the flavorful dressing. In a mixing bowl, combine all the dressing ingredients: soy sauce, gochugaru, vinegar, oligodang, minced garlic, sugar, sesame oil, and toasted sesame seeds. Whisk everything together with a spoon or whisk until well combined.
Step 6
Add the shelled clam meat to the prepared dressing. Gently mix the clams with the dressing, ensuring each piece is coated evenly. Be careful not to break the delicate clam meat as you toss.
Step 7
Finally, add the chopped Korean wild chives and 1 Tbsp of toasted sesame seeds. Toss lightly one last time to combine everything. Your refreshing and flavorful clam and Korean wild chive salad is now ready! It’s delicious served immediately, or you can chill it in the refrigerator for a short while to allow the flavors to meld even further.
