Main Ingredients- 100g mini king oyster mushrooms (about one handful)
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds (for garnish)
Braising Sauce- 4 Tbsp soy sauce (adjust if using soup soy sauce)
- 2 cups (400ml) water
- 1 Tbsp corn syrup or rice syrup
- 2 Tbsp minced garlic (generous amount)
- 4 Tbsp soy sauce (adjust if using soup soy sauce)
- 2 cups (400ml) water
- 1 Tbsp corn syrup or rice syrup
- 2 Tbsp minced garlic (generous amount)
Cooking Instructions
Step 1
First, trim the ends of the bullet mushrooms (mini king oyster mushrooms). Blanch them in boiling water for about 30 seconds to 1 minute. This helps remove any raw mushroom flavor and enhances their chewy texture. Immediately rinse the blanched mushrooms under cold water to stop the cooking process, then drain them thoroughly in a colander.
Step 2
Now, let’s start braising. Place the drained bullet mushrooms in a pot. Add the soy sauce, water, corn syrup (or rice syrup), and minced garlic. Stir everything together to combine the sauce ingredients. Bring to a boil over medium heat, then reduce the heat slightly and let the mushrooms simmer and absorb the flavors.
Step 3
While braising, stir the mushrooms occasionally to ensure they are evenly coated with the sauce. Continue to simmer for about 10-15 minutes, or until the liquid has reduced significantly. When the sauce is almost gone, add 1 tablespoon of sesame oil and a pinch of toasted sesame seeds. Reduce the heat to very low and stir-fry gently, as if coating the mushrooms, for another minute. This will give them a glossy finish and add a rich, nutty aroma.
Step 4
Once finished, let the braised bullet mushrooms cool slightly before transferring them to an airtight container for refrigeration. You can serve them as is, or chop them into bite-sized pieces. They are also delicious served over rice. Enjoy this simple yet satisfying ‘rice-stealing’ side dish, bullet mushroom soy-braised delight, for a delightful meal!
