Main Ingredients- 8 fresh shiitake mushrooms (approx. 120g)
- 1/4 stalk green onion
- 1/4 onion
- 1/6 carrot
- 2 Tbsp cooking oil
Seasoning- 1/2 Tbsp minced garlic
- 1 Tbsp cooking wine (like Mirin)
- 1 Tbsp soy sauce
- 2/3 Tbsp oyster sauce
- 1 Tbsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Trim the tough stem ends of the shiitake mushrooms. Lightly rinse them under running water and then pat them thoroughly dry with paper towels.

Once dried, slice the shiitake mushrooms into bite-sized pieces. Slicing them about 0.5cm thick will give you a pleasant chewy texture.

Finely chop the green onion. Thinly slice the onion and carrot into matchsticks. Try to cut the vegetables uniformly so they cook evenly.

Heat a pan over medium-low heat and add 2 Tbsp of cooking oil. Add 1/2 Tbsp of minced garlic and sauté until fragrant and lightly golden brown. This step is key to removing any raw garlic smell and infusing the oil with flavor.

Once the garlic is golden, add the chopped green onion, sliced onion, and carrot to the pan. Stir-fry over high heat for about 1 minute to keep the vegetables crisp.

When the onions start to turn translucent, add all the prepared shiitake mushrooms to the pan. Stir everything together over high heat to combine well, ensuring all ingredients are evenly mixed.

Now, add 1 Tbsp of cooking wine, 1 Tbsp of soy sauce, and 2/3 Tbsp of oyster sauce. Stir-fry quickly over high heat, allowing the sauce to coat the ingredients. Continue stir-frying until any excess moisture evaporates, which will enhance the flavor and texture.

Taste the stir-fry and if it needs more saltiness, add a little more oyster sauce. For a touch of sweetness, you can also add a tiny bit of sugar (about 1/3 tsp).

When the shiitake mushrooms have released their juices and the mixture is tender, turn off the heat. Drizzle in 1 Tbsp of sesame oil to add a rich, nutty aroma.
