Homemade acorn jelly offers a chewiness and freshness that store-bought versions can’t match. After a previous unsuccessful attempt, I learned the proper technique from my mother-in-law and succeeded in making this wonderful dotorimuk. This recipe will guide you through creating delicious acorn jelly right in your own kitchen. Enjoy a variety of dishes with this healthy and tasty treat!
Ingredients- 1 cup acorn powder
- 5.5 cups water
- 1/2 teaspoon salt
- 1 tablespoon perilla oil (deulgireum)

Step 1
The key to making great dotorimuk lies in the ratio of acorn powder to water. While a 1:5 or 1:6 ratio is common, I’ve found that a 1:5.5 ratio results in a perfectly chewy yet tender texture.
Step 2
In a clean bowl, combine 1 cup of acorn powder with 5.5 cups of water. Whisk or stir thoroughly with a spatula until the mixture is smooth and free of lumps. It might seem lumpy at first, so be sure to mix well.
Step 3
Next, strain the acorn mixture through a fine-mesh sieve. This step is crucial for achieving a silky smooth texture in your dotorimuk, ensuring no grainy bits remain.
Step 4
Now, place a pot over medium-high heat and pour in the strained acorn mixture. From this point on, it’s vital to stir continuously in one direction only. Stirring in a single direction prevents air bubbles from forming, resulting in a beautifully smooth jelly. Add 1/2 teaspoon of salt and continue stirring until the mixture begins to boil.
Step 5
Once the mixture starts boiling, reduce the heat to medium-low. Continue to stir constantly for at least 15 minutes, ensuring it doesn’t stick to the bottom of the pot. Cook until the dotorimuk becomes translucent and thick. Just before turning off the heat, stir in 1 tablespoon of perilla oil to enhance the flavor.
Step 6
Prepare the mold where you will set the dotorimuk. Lightly coat the inside of the mold with perilla oil. This will make it much easier to unmold the jelly once it has set.
Step 7
Carefully pour the hot, cooked dotorimuk mixture into the prepared mold. Use a spatula to gently smooth the top surface. To remove any air bubbles, tap the bottom of the mold lightly on the counter 2-3 times. This ensures a perfectly smooth finish.
Step 8
Allow the dotorimuk to cool completely at room temperature. Once all the steam has dissipated, cover and refrigerate it. After chilling, you’ll have a wonderfully firm, chewy, and delicious homemade acorn jelly. Enjoy it on its own or as part of your favorite Korean dishes!
