Chewy and Unique! Potato Gnocchi Tteokbokki

Introducing an unusual tteokbokki recipe made with chewy potato gnocchi instead of traditional rice cakes. Main Ingredients- 1/2 medium onion
- 1/2 stalk green onion
- 300g potato gnocchi (store-bought or homemade)
- 250ml water

Step 1
First, prepare the vegetables for the tteokbokki. Peel and thoroughly wash half an onion. Slice it thinly into strips about 0.5cm thick.
Step 2
Wash half a stalk of green onion, trim off any withered leaves or blemishes, and then slice it diagonally. This way of cutting helps the onion’s aroma infuse better into the sauce.
Step 3
Get your 300g of potato gnocchi ready. You can use store-bought gnocchi or homemade potato gnocchi. If using frozen gnocchi, make sure to thaw it beforehand.

Now, let’s make the delicious sauce! In a pan or pot, pour in 250ml of water. Add 2 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp coarse gochugaru, 1.5 Tbsp sugar, and 1 Tbsp curry powder. Stir everything well with a spatula until all the ingredients are evenly combined.
Step 5
Add the sliced onion and green onion to the prepared sauce. Turn the heat up to high (strong heat) and bring the sauce to a rolling boil. Let it simmer until the vegetables start to soften and blend with the sauce.
Step 6
Once the sauce is boiling vigorously, add the prepared potato gnocchi. After adding the gnocchi, reduce the heat to low. Let it simmer gently over low heat for about 5-7 minutes, allowing the gnocchi to cook through and absorb the flavorful sauce. Remember to stir occasionally to prevent sticking!
