Cooking Instructions
Step 1
It’s best to use small potatoes, around 100g each, if possible. Smaller potatoes tend to have less moisture and are firmer than larger ones, which helps them hold their shape better during braising. Of course, you can use larger potatoes if that’s what you have. Peel the potatoes and cut them into bite-sized cubes, about 2-3 cm in size. Cutting them too small can cause them to break apart easily while cooking, so aim for a consistent, medium size.
Step 2
Place the cut potatoes in a bowl and generously cover them with cold water. Let them soak for about 10 minutes to remove excess starch. This step helps to create a smoother surface and prevents the potatoes from falling apart during cooking.

Wash the Korean green chili peppers (gwari gochu) thoroughly and remove their stems. Cut them into 3-4 segments. Their slightly spicy and chewy texture complements the potatoes beautifully, so be sure to include them!
