Cooking Instructions
Step 1
First, prepare the vegetables. Remove the seeds from the red chili pepper, wash it thoroughly, and then slice it thinly. Wash the green onions, pat them dry, and cut them into approximately 5cm lengths. These prepared vegetables will add color and freshness to the dish.

The key to delicious cockle bibimbap is the sauce! In a medium-sized bowl, combine 4 Tbsp soy sauce, 2 Tbsp chili powder, 2 Tbsp of savory perilla oil, 1 Tbsp sugar for sweetness, 1 Tbsp cooking wine to remove any gaminess and add umami, 1 Tbsp sesame seeds, and 1 Tbsp minced garlic for flavor. Mix everything thoroughly with a spoon to create the seasoning sauce. It’s important to stir until well combined.
Step 3
Now, add the prepared vegetables and the cooked cockle meat to the seasoning sauce and gently mix them together. The trick is to mix them gently without mashing the cockle meat, ensuring the sauce is evenly distributed. The crispiness of the vegetables and the chewiness of the cockles will create a wonderful texture.
Step 4
Place the warm rice in a bowl, and generously top it with the seasoned cockle mixture you just prepared.
