Yulan Ingredients

  • 1kg boiled and peeled chestnuts (about 5-6 large chestnuts)
  • 2.5 Tbsp honey (or corn syrup)
  • 1/2 tsp ground cinnamon
  • 1 Tbsp white sesame seeds
  • 1 Tbsp black sesame seeds

Cooking Instructions

First, wash the chestnuts thoroughly. Steam them in a steamer or boil them in a pot until very tender. They should be easily pierced with a fork. Once cooked, halve the chestnuts and use a small spoon to scoop out the soft inner flesh.

For an even smoother and finer texture, you can pass the scooped chestnut flesh through a fine-mesh sieve. This will create a smooth chestnut puree, elevating the final texture of your Yulan.

In a bowl, combine the chestnut puree with 2.5 tablespoons of honey (adjust sweetness to your preference) and 1/2 teaspoon of ground cinnamon. Mix well using a spatula or spoon until the honey and cinnamon are evenly incorporated into the chestnut mixture. Knead the mixture until it becomes slightly sticky and cohesive.

Divide the chestnut mixture into bite-sized portions and shape them into small, flattened round forms, resembling the shape of a chestnut. Making them small and dainty will make them easier to eat and more visually appealing.

Lightly brush the flat bottom surface of each shaped Yulan with a little honey. This honey layer will act as a binder for the sesame seeds and cinnamon.

Gently press the honey-coated bottom of the Yulan into the white sesame seeds, black sesame seeds, and the remaining ground cinnamon separately to garnish. Lightly press to ensure the seeds and cinnamon adhere well. Your Yulan, now complete with delicious flavor, appealing aroma, and beautiful appearance, is ready to be enjoyed! They are delicious served at room temperature or chilled from the refrigerator.
